The old monastery of Paou which, after its restoration, functions as congress and cultural center of the University of Thessaly is surrounded by an area of about 60 hectares that includes an olive grove with 1,600 trees.
In 2016, we decided to standardize the small oil production of this year (acidity <0.4- extra virgin olive oil) and provide it in bottles of 500ml oil (as well as soap). At the same time, in collaboration with the Laboratory of Agronomy and Applied Crop Physiology (Department of Agriculture Crop Production and Rural Environment of the University of Thessaly), the olive oil of our farm is also available in mixture with cardoon (thistle artichoke) seed oil in bottles of 500ml and 750ml.
